Nieve de Cabra
This soft-ripened goat cheese is made in the heart of the region of Extremadura by our producers of Torta del Casar DOP. Extremadura is a region rich with sheep’s milk cheeses, but goat cheeses are rare. Nieve de Cabra was developed to highlight a style of cheese typical of French cheesemaking. It is a small-format, soft cheese made from fresh, local goat’s milk. Bright and well balanced, it will satisfy those looking to venture beyond Brie. It’s wildly approachable, starting out semi-soft and becoming creamier and softer as it matures.
