This Parmigiano Reggiano comes from mountain pastures of 600m (1968 ft) in the province of Parma. Just 35 dairies have the certification to mark their cheese with the “Mountain Product” seal, which guarantees the quality of the cheese and preserves the uniqueness of these mountain areas. The cheese is aged for almost 3 years and has a delicate and complex flavor. Fruity, nutty notes and sweetness are balanced by savory umami, a classic Parmigiano Reggiano trait. The texture is very compact and granular. The cheese will slightly resist the bite but will melt in your mouth, coating the palate.
