These special pear preserves are made by Fabrizio and Pierpaolo’s family using 100% pure fruit and concentrated grape juice as a natural sweetener. Pectin is not used in the manufacture of these preserves. Instead, they are cooked at a low temperature which benefits both the flavor and color of the original fruit. The absence of pectin also allows each jar to have much more fruit. Not too tart or too sweet, Perata pairs well with Caña de Oveja, Nocetto di Capra, Cacio de Roma®, or Castelrosso.
