This classic fresh cheese from the medieval city of Burgos is made with pasteurized cow’s milk. Mild and soft, with flavors of fresh milk, it is approachable and versatile in the kitchen. Though normally not available in the U.S. due to its short shelf life, this cheese has a recommended shelf life of 2 months after production. Preorder only.
