Raclette used to be peasant food that was simple to prepare and pleasantly filling and satisfying. Its origin is in the Valais region and other areas of western Switzerland and across the border in France. Legend has it that a Valais grape grower named Léon warmed up slices of cheese over an open fire and created the quintessential preparation of the cheese. The name Raclette comes from the French word racler, meaning “to scrape.” Raclette from the Valais is considered the real deal and top quality.
