Another impressive creation from our Taleggio producer, this goat’s milk cheese is inoculated with Penicillium roqueforti spores. After its first month of aging, it is pierced to allow the cheese to blue and then matured to a full 90 days. Slightly less creamy than a Gorgonzola Dolce, this fudgy blue has a pleasant tang without being too sharp.
