Ziegenkäse 2024 – Alp Rainhütten

Beni Hollenstein’s small format cheeses are made with raw Appenzell goat’s milk. The goats wander freely on the mountain pastures and return to the state of the art barn to sleep. Their cheese has a firm paste with vegetal flavors and notes of fresh yogurt.
