Our second selection from Paška Sirana is a blend of cow (90%) and sheep’s milk (10%). Since the rough terrain of Pag is largely inhospitable to cows, their milk is sourced from the mainland. But all of the sheep’s milk is collected from the same island breed as used with the Paški Sir. While buttery, toasted nut flavors dominate, the paste also reveal hints of aromatic herbs and salt of the grasses the animals have fed upon. Winner of a Super Gold at the 2014 World Cheese Awards.
