In the midst of our 20th anniversary, we are looking forward to celebrating with our cheese family at ACS this year. We are so grateful for this community and have many of you to thank for our success over the years. We will have a display in the Gallery at the convention center this year; please stop by if you’re attending! All day Thursday and Friday you will be able to try our newest products and revisit some of our old favorites. Here are the details:

We can’t wait to catch up and show you what cheeses have us excited right now. Here’s a quick preview of some of the products you can expect.
Cheeses from Südtirol
These raw milk Alpine cheeses were a huge hit at the Fancy Food Show. Our first cheeses from this northern Italian region bordering Switzerland and Austria, they are sourced from small family farms. The mountain pastures lend a dynamic herbal quality to the milk. We will have 3 cheeses at ACS: Butterkäse Dolcetto, a soft, buttery, meaty wheel; Rahmkäse Gran Cru, an 18 month aged cheese with a dense paste and aroma of roasted nuts; and Ziegel Mattone, a semihard washed rind cheese made with milk from Pinzgauer cows.
Pecorino Debbene Verde Naturale
This Bio cheese from Sardegna is made with raw sheep’s milk and thistle rennet. It is aged approximately 12 months, with an herbal taste and slight piquancy in the finish. Michele just visited their organic farm in Ollolai, where wild thistles grow among the grazing Pecora Sarda.
New Nuts
Our new Orange Ginger Marcona Almonds and Honey Cinnamon Largueta Almonds are catching people’s attention! We also have brand new pecans dipped in chocolate and dusted with cocoa and coffee. These unexpected varieties are satisfyingly sweet, delicate, and supremely crunchy. They are elegant and work perfectly on a cheese board or with a cocktail.
