Nieve de Cabra With a rind that evokes an unspoiled layer of fresh snow, Nieve de Cabra is our newest goat cheese and hails from Extremadura, Spain. This soft-ripened cheese is skillfully aged for one month by the experts behind our Torta del Casar DOP. Bright and balanced, it starts out semi-soft and becomes more decadent and creamier with age. KM 39 Discovered along the Camino de Santiago pilgrimage route, KM 39 is a wheel that stands out among Galicia’s cow’s milk cheeses. Where soft, lactic cheeses like Arzúa-Ulloa and Tetilla are standard, this minimum 16-month aged cheese is reminiscent of an Alpine style rather than something young and mild. Carmela, the dairy owner, along with cheesemakers Maria Jesus and Marisa, made it their goal to create a singular cheese using the rich milk from their local area’s 100% pasture-fed cows. This impressive 25 pound wheel is hard and granular with intense aromas of toasted bread and fruit. The flavor is robust and complex – your palate will light up with notes of banana, caramel, and chestnut. 1/25#
Italian Mitica® Meats from Piacenza When we brought these in last summer, they were received with much excitement. It was a revelation when we first tried these cured meats, including a range of DOP selections – we had been looking for something with this level of quality and flavor for a long time. Our producer uses pigs that are born and bred solely in the regions of Emilia Romagna and Lombardia and process the same day, even though the DOP requires a maximum of 72 hours. They slow age their meats in handmade natural casings, ensuring meat that is not too dry with rich, concentrated flavor. We carry Coppa Piacentina DOP, Guanciale, Pancetta Piacentina DOP, Salame Milano, Salame Piacentino DOP, and Salame Tartufo. ‘Nduja, the spicy, spreadable sausage, has just arrived in time for summer.
Pesetas Mitica® Our new Pesetas are everything you love about our Spanish Fig Almond and Date Almond Cakes in a tender, bite-sized coin. Soft, juicy, and fresh tasting, they are made with just dried fruit and crunchy bits of buttery almonds. Available in both plain and chocolate-dipped versions, this snack is unexpected and delicious. As with all of our fruit and nut cakes, they are made in Valencia without additives or preservatives. The name pays homage to the now defunct Spanish currency, the peseta. 18/2.6oz
Producer Highlight: Nadia Herrera, Grupo Ganaderos de Fuerteventura
Nadia is an excellent advocate for Canary Island cheese and we are thrilled she’ll be joining us in our booth again this year. As Export Manager for Grupo Ganaderos de Fuerteventura, she helps us get the four cheeses of theirs that we carry: Alisios®, Cabra al Gofio, Maxorata (Queso Majorero DOP), and Smokin’ Goat®. Despite each featuring milk from the native Majorero goat, each has a distinct profile worthy of any cheese case. Over the past several years we’ve worked together, we’ve grown our Canary Island cheese catalog thanks to this family-owned company focused on making phenomenal cheese traditionally and sustainably.
