Appenzeller® Silver Label (3 Month)
This creamy, slightly piquant raw cow’s milk cheese, known for its silver label, is one of the staples in the Swiss cheese landscape, just like Emmentaler or Gruyère. We source our Appenzeller from a single dairy in the small village of Andwil. Cheesemaker Anton Birrer collects milk for his cheese from 20 local farms, all of which feed their cows solely grass and hay. What makes Appenzeller really special is the smear with which wheels are rubbed – it includes an undisclosed mixture of herbs, spices, liqueurs and/or wine from the region.
