More commonly associated with the south of Italy, where their milk is used for fresh cheeses like mozzarella, Water Buffalo have also found a haven in northern Italy. We work with the innovative dairy, Quattro Portoni, who radically changed their business to raise a superior breed of buffalo instead of cattle. In the 15 years since, they have established an award-winning dairy, making aged buffalo milk cheeses on their sustainable farm.
