Capriolina
A small format washed rind goat’s milk cheese from the master affineurs at Arnoldi in the mountains of Val Taleggio. Aromatic and buttery, it has the typical acidity of goat’s milk cheese and a good dose of funk. Because of its small size and unique way of washing (a closely guarded secret of the Arnoldi family), Capriolina has a more pronounced flavor than larger washed rind cheeses like Stracapra.
