This raw sheep’s milk cheese is an excellent alternative to Serra da Estrela. Its pudding-like paste is vegetal and herbal with a signature floral finish. Slice off the top and serve with a spoon for a showstopping presentation. This cheese starts off with raw milk from sheep that graze in the pastures of the Serra da Estrela mountains. The Pinto family has been making cheese since 1989, first starting in their garage and gradually growing into a cheese plant in 2001. The use of thistle is very characteristic of Portuguese cheeses and lends a distinctive floral tang.
