Rolf Beeler collaborates with cheese maker Didier Germain to produce this outstanding Gruyère which is aged for a total of 18 months. Enjoying it at this stage is like dancing between creaminess and crunch, sweetness and salt, power and elegance. Gruyère is always made of 100% raw milk from local cows that only feed on fresh grass and hay.
