Ilha dos Misterios

This cheese is our first from the Azorean island of Pico, home to the largest mountain and volcano in Portugal. The cheese is made with fresh milk from the verdant island’s cows. Ilha dos Misterios (island of mysteries) honors the beauty and history of the island with a unique flavor that is pleasantly creamy and buttery with a distinct fruitiness. It's a mildly pungent cheese with a toothsome rind and a texture in between amanteigado (soft) and semi-soft. As the cheese matures, it gets more funky, with flavors of mushroom. Preorder only.
