L’Etivaz AOP
A seasonal Alpine cheese made in the Vaud Alps each May through October. Production is very limited; the cheese is made over a wood fire and even the largest producers only make up to 5 wheels a day at the peak of their production. L’Etivaz stands out for its complex, fruity paste that has a hint of hazelnut and smoke. Sold in quarter wheels.
