A farmstead washed-rind raw sheep's milk cheese from Llorema at Quesos Ruperto. Her family owns a herd of 4000 Lacaune sheep and grows all their feed on their farm. The milk goes straight from the milking parlor to the dairy, and she is in charge of all facets of the closed-circle operation. Luna Llena is aged a minimum of 60 days, developing a slightly sticky orange rind and pudgy ivory paste. Aromas of hay and fresh herbs are accented by mushroom, damp earth, and subtle animal notes on the rind. The creamy, buttery paste is intense and persistent with pleasant acidity and hints of sweet cream to balance it out. A bold, potent, stinky cheese. Preorder only.
