‘Nduja is a spicy spreadable pork sausage flavored with both chili and Calabrian sweet pepper. It is characteristically spicy and aromatic, with deep pork flavor. We source our 'Nduja from a top producer that uses only Italian pigs, specifically from the regions of Emilia Romagna and Lombardia. They use heavy pigs and process the same day. To make the sausage, they chop pork meat and fat and mix them with sweet pepper and chilis, packing it into natural casings by hand before slowly aging it for a month. Their slow, methodical production process and expertise is apparent in the high-quality final product.
