For this farmstead cow's milk cheese, select wheels are coated in malted barley and whisky for a rustic appearance and flavor. Aged 14 months, a strong, heady aroma gives way to a malty, nutty flavor, with hints of whisky. The strong aromas and flavors balance the rich, milky, fudgy cheese. Beppino Occelli’s philosophy has always been rooted in a fruitful relationship between man and environment. Inspired by the pastoral heritage of his home region of Piemonte, Occelli started out by producing his now famous butter in 1976 using milk from cows grazing on the alpine meadows. Since then, he has a developed a line of remarkably unique farmstead cheeses that are unmistakably “Occelli,” using the best quality alpine milk. Preorder only.
