Queso Castellano IGP Viejo
This six-month aged Castellano cheese is semi-firm and buttery, with some acidity in the finish. Though it has been made for centuries, Queso Castellano received an IGP (protected geographical indication) from the EU in 2020, which protects its production. We source the cheese from a third-generation company, which sisters Luisa (cheesemaker) and Laura (marketing/sales) now run after taking over from their father. They purchase milk from local farms and use traditional cheesemaking and aging techniques to create this quintessential, high-quality Spanish cheese. It has a warm and pleasant nutty aroma. The flavors slowly evolve, starting with brown butter with a long, nutty, fruity finish.
