This semi-soft washed-rind cheese is reminiscent of Taleggio, but is made with goat’s milk. Luca Arnoldi, his cousin Mauro, and others from the Arnoldi clan age the locally produced cheese, which is made with milk from 700 Saanen goats dwelling in the Alta Imagna Valley in Bergamo.
