Taleggio Gusto Antico DOP
This is a small batch, longer-aged Taleggio made with cow's milk by the famed affineurs at Arnoldi. It is aged for about 60 days on wooden shelves in ventilated caves, developing a slightly pungent paste with natural molds mottling the rind. The cheese is fruity and full bodied with a mellow tang.
