Our newest goat cheese is The Truffle Kid™, a 6-month-aged goat cheese with black truffles. Made in Jumilla, Spain, it is a part of our line of specialty goat cheeses, including The Drunken Goat®, Naked Goat®, and Smokin’ Goat®. What makes this cheese unique is the beautiful marbling in the paste of the cheese, a process inspired by the production of blue cheese. Wheels of Naked Goat® (Queso de Murcia DOP) are pierced during aging, introducing rich black truffle paste into the cheese. The same paste is spread onto the rind, giving the cheese a strong but balanced truffle flavor and aroma while maintaining mild lactic notes and a sweet, tangy finish. It’s an innovative take on truffle cheese that we’re thrilled to introduce to the market.
