Grana Padano DOP Mitica®
The name Grana refers to the grainy texture of this famous Italian cheese. It was created by monks in the Po Valley in the 12th Century as a way to preserve surplus milk and grew in popularity over the centuries. We import our Grana Padano from one of the most historic producers. The Mantova-based co-op uses milk exclusively from their members, 15 farms located within a 15 mile radius of the plant, to make cheese known for its superb quality and consistency. We select larger wheels of Grana (80-85 lbs) because they age best. Over 80% of the production of Grana is aged between 9-13 months. Many of these cheeses also do not perform well with longer aging, but our wheels actually improve with age. We buy cheese aged minimum 18 months (often 19 or 20) so that it is fruity and full-bodied, with a long finish.
