Provolone Piccante DOP
A traditional cow’s milk stretched-curd cheese, our Provolone is made by the most esteemed producer in Lombardia. It is made with raw milk and has a sharp, tangy flavor with a lingering finish. We offer both a Mandarino, which is pear-shaped and aged 6-7 months (45 lbs), as well as Salame, which is torpedo-shaped and aged 10-12 months (65 lbs). We also sell cuts of the Salame (2/14 lbs) and a natural, sorbate-free cheese (1/13lbs).
