Camerano DOP
A cheese with nearly 700 years of history, Queso Camerano is made in the Sierra de Cameros in La Rioja, Spain. Local goat farmers travel between the valleys and the mountains, where the goats graze. Around 80% of their diet is from grazing in pasture. Our producer sources milk from 11 local farms. The cheese is made with goat rennet and pressed using only the weight of stacking the molds. It is aged a minimum of 75 days, during which it is rubbed with olive oil and develops a rough grey natural rind with light mold. It is very aromatic, earthy, and lactic. Preorder only.
