Solodibruna is a cheese produced in the small commune of Lesignano de’ Bagni, in one of the most important areas in the province of Parma specializing in milk production for Parmigiano Reggiano. It is made from 100% Swiss Brown cow’s milk, known as Bruna Alpina in Italy. We choose to work with a family-run dairy who believes in the quality of this particular breed of cow due to its unique equilibrium of quality and ability to produce milk. Their closed circle farm controls every aspect of production, even growing the feed for their herd of approximately 100 animals.
