Ubriaco alla Birra Rossa
This exceptional cow’s milk cheese is bathed in beer for a minimum of 100 days. Cheesemaker Sergio Moro sources the red double malt beer from a local brewer friend. It’s one of several Ubriaco style cheeses that Moro makes that celebrate the flavors of the Veneto region. The pliant, doughy paste is fruity with hints of toasted malt. Preorder only.
