Urepel
Our producer of Idiazabal, Mikel, found this outstanding aged sheep's milk cheese from the French Basque Country. Named for a French Basque town from the province of Behe-Nafarroa, Urepel pays homage to Ossau Iraty, a classic Basque sheep's milk cheese. The cheese is seasonal; production is limited to the months of December through July, totaling about 2000 cases a year. Aged six months, it is regularly washed during its aging, developing a thin tan-colored rind, semi-firm texture, and distinctive, complex flavor with notes of fresh grass and toasted nuts.
