Asiago Stravecchio DOP Mitica®
Asiago is a DOP thermalized cow’s milk cheese produced in the provinces of Vicenza, Trento, Padova and Treviso. Of the three ages of Asiago available, Stravecchio is the oldest, meaning “extra aged.” Milk is taken from cows grazing on the pastures of the Asiago Plateau and surrounding areas, which have a mild climate, fresh air, and healthy grasses. After 12 months of aging, the cheese develops complex aromas of bread and almonds and an intensely nutty, approachable flavor with minimal sharpness. It is a versatile cheese for grating that is also elegant enough for a cheese board.
