These cheeses are brushed, or “washed” with a solution of brine, wine, beer, or liqueur several times during their aging. Through this process, they develop a sticky rind that can smell yeasty, beefy, or barnyardy. The paste inside is usually quite creamy and much less potent than it might smell. Quadrello® di Bufala, Luna Llena, and Taleggio are all carefully washed during their aging, which helps make them a cheese board favorite with a wide range of flavors.
