Roncal DOP
The first Spanish cheese to obtain the DOP status, Roncal is produced from raw milk at the foot of the Pyrenees in Navarra. Our cheesemaker Mikel runs a family operation and is assisted by his brother and wife. They are one of only a handful of dairies making the cheese. Though often compared to Manchego, Roncal is more complex and piquant, with notes of lanolin and butterscotch.
