You may already be familiar with our Wooly Wooly® logs; they are made from high quality fresh sheep’s milk in Spain. Developing a line of semi-firm sheep’s milk cheeses under the Wooly Wooly® brand was a logical next step, and we’re excited to debut this delicious new line just in time for summer.
Newly arrived from Spain, Wooly Wooly® semi-firm sheep’s milk cheeses are a stunning addition to any cheese case. They come from the golden plains of Castilla-La Mancha, a region known for its many herds of sheep and long history of cheesemaking. It is from this tradition that Wooly Wooly® originates, and the quality of these cheeses is clear from the first delicious bite to the last. We can’t wait for you to try them!
The use of fresh sheep’s milk, as well as the minimum 5 months of aging, gives these cheeses a buttery and nutty flavor profile with a hint of tang. Fans of Manchego will be reminded of the texture and flavors they love and will appreciate the addition of unique flavors either marbled throughout the paste and/or coating the rind.
The initial launch includes the following flavors: Black Garlic, Black Truffle, Diablo (hot pepper), Honey Oregano, and Jalapeño. Classic 3 month and 8 month aged versions are arriving soon. Marbled cheeses are sold in half wheels to show off the beautiful paste. Prepack 5.29oz wedges are also available.
