Goat

Goats are famous for being indiscriminate eaters, munching on brush, thorny plants, and a wild variety of wild herbs and flowers as they forage. The flavors of these plants often come through in goat’s milk cheese, creating a very strong sense of place based on the terroir of the land. Like cows, there are many distinct breeds of goats, some indigenous only to a small region, and this greatly influences all aspects of the cheese. Goat’s milk cheeses can be fresh and creamy, like Capricho de Cabra, soft-ripened with an oozing creamline like Leonora®, or skillfully aged and complex, like Crü di Capra.
